Onion Omelette Breakfast Bagel

You know those mornings where you can't decide whether to have a breakfast sandwich, a bagel or an omelette? (Honestly with these rhetorical questions of mine, I am only describing myself...) Well look no further! With a wham and a bam (and some pam) you can create... a combination of all three! Who'da thunk it? (I'm using all this hype to make it seem like I made an elaborate breakfast when this is just my "I need to get out of the house and I'm in a hurry" kind of breakfast)






So this is how I start my mornings. In a panicked haze, trying to find something to eat for breakfast, because I need to be out of the door in a couple of minutes. For a normal person, this may seem acceptable since if you really have to be out the door by 7:30am, waking up is a process in itself at that hour, let alone making breakfast. But for me, I wake up at around 4am normally, so I have more than plenty of time to get even a grand breakfast ready.

But I get too distracted. Usually by...*cough* math books *cough*cough*. Call me a nerd, but...math is pretty cool. How I got the nickname Mathleen. Not very nickname-y since it takes the same amount of time saying that as it would my actual name, but people find it amusing. They even made me a pencil with a flag saying "I love math". Now it will proudly fly every time I need to write anything down.




What you'll need:

 -2 eggs
-1/4 large onion, chopped into cubes
-2 slices tomato
-1 bagel
+seasoning salt
+cooking spray


Directions:

    1.   In a small bowl, beat the egg. Add some seasoning salt (to your preference) and mix well.  Fold the onion into the egg mixture.

    2.   Pour the egg mixture onto a skillet sprayed with cooking spray on medium heat. Flip after around 3 minutes.
    3.   Meanwhile, toast the bagel.
    4.   Assemble sandwich and enjoy!

  2. I have the same dilemma, only mine happens at night before I sleep... Yes, I start thinking of breakfast before I hit the sack. I used to not care so much for bagels but my boyfriend got me into it. You know what I discovered yesterday when I was making an egg omelet to eat with my bagel? Cook alfalfa or clover sprouts in your eggs. They are delicious!

  3. wow!amazing..mathleen!i could barely get by!!!!!!and you get up at 4 am..god help!i can barely manage to open my eyes at 5.45am..it helps that i have no choice(got to get the kids up and packing to school).
    onion omelette is an all time fav....nice breakfast.

  4. Hats off to you dear for getting up at 4...cant barely open them at 6.30..and force myself out of bed...coz have to pack two kids to school and one hubby to office...onion omelette is a weekend affair at my place....Happy to follow u.

  11. I'm sorry, I'm trying to focus on the delicious bagel but my heart can't cope with the fact that you wake up at 4am. I can't even get to sleep until after midnight. Hoooooo-boy! :P

  14. If only we were gradeschool seatmates, I could have aced my Math scores...Well, I am pretty much a breakfast eater. My mom used to tell me, I have to start my day with a big breakfast to make sure I'd last the whole day. It kinda' got stuck in me. The same thing I am telling my daughter. I wake up an hour before heading where I am supposed to be, but the 45 minutes of that is spent with breakfast, yup! I can get ready in 15 minutes or less.
    This looks like a really perfect breakfast to spend my 45 min devouring and preparing. =) Thanks!

  17. I get up super early and always have time for breakfast also, but that doesn't necessarily make the decision of what to have any easier! I love the sound of this! You get the best of all breakfast worlds!
