Chicken Salad Sandwich
Well, it is back to school time. Back to the books. Back to busing every day for 1.5 hours to get there. Oh the joys of transit.
Living on campus has always been my dream. There would be no more waking up at some ungodly hour to sit on the bus for 3 hours of my day. Waking up to the gorgeous campus of UBC, and not having to worry about the rush to get everything ready before I go.
But nope, nope, nope. UBC is plagued with construction, I live quite far, and mornings for me start at 5:30AM, and I come home pretty late. Which means I have no time to make breakfast, and no time to make lunch, and certainly no time to make dinner. My solution?
Buy hot chicken from the deli at Safeway of course! And what will I do with the leftovers?
Make this super easy, super delicious chicken salad. Maybe I do have time to make lunch after all.
What you'll need:
-2 cups cooked chicken, cubed
-1/2 cup mayonnaise
-1 teaspoon italian seasoning
-1 stalk celery, chopped
Directions:
1. In a medium bowl, mix all the ingredients together.

I really love such chicken sandwiches. One of the most delicious thing for a quick snack :) And just like you said- great way to use leftovers :D

ReplyDeleteCathleen, this is one of my favorite ways to use leftover cooked chicken, especially if it is barbequed. I like to add chopped toasted walnuts or pecans to mine for a little meaty crunch.

ReplyDeleteChicken salad is one of those things that's so simple to make but tricky to get exactly right. You've done a terrific job. I really feel for you with your commute - when I worked in NYC, for a bit mine was a good hour and a half each way (eventually I moved and got it down to just over an hour - bliss!).
