When I woke up this morning, I experienced something that I haven't felt in such a long time: reluctance to get out of bed. I am a HUGE morning person, and I usually have no problem jumping right out of bed, and starting the day all fresh and bright. But today?
It was cold and really dark, and I didn't feel like I should leave the comfort of my own bed. Because, you know, it was warm(er). When I finally dragged myself out of bed, of course needed to reward myself. And if you start your day with Nutella, it will make up for the fact that you needed to be out the door by 6AM.
What you'll need:
-3/4 cup milk
-2 tablespoons white vinegar
-1 cup all-purpose flour
-2 tablespoons white sugar
-1/2 teaspoon baking soda
-1 teaspoon baking powder
-1/2 teaspoon salt
-1 egg
-2 tablespoons butter, melted
-2 tablespoons Nutella
+cooking spray
Directions:
1. In a medium bowl, combine the milk and the vinegar, and let stand for at least 5 minutes to "sour"
2. In a separate bowl, combine flour, sugar, baking powder, baking soda and salt in a large mixing bowl. Whisk egg and butter into the "soured" milk. Pour the flour mixture into the wet ingredients, and whisk it together until the batter is smooth. Mix in the Nutella until fully incorporated.
3. Heat a large skillet over medium heat and spray with cooking spray. Scoop 1/4 cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Flip and cook the other side until it is golden.
