This has been on my Pinterest to-do list for the longest time.
I've been holding off making it for a time when I literally have less than 15 minutes to spare and I want to make something delicious for the people I care about.
My week has been jam-packed. Apart from going to school for the whole day, I also went skiing for the second time in my life Saturday (it's weird. Last time I went skiing was two weeks ago and I'm already hooked!) It was great because I went with my boyfriend and his two brothers, and it was both my birthday and my boyfriend's brother's birthday, so I got to ski for free.
Apart from the never spoken about but always in the back of my mind fact that my boyfriend was leaving for Russia the next day for 4 months, it was the best birthday I have ever had. I even skied beside some guy in nothing but shorts and an Australia flag as a cape, yelling "Happy Australia day!" How could you not have fun on one of those days..
So while I had a lot of fun, I wanted to make something that is both delicious and easy to make after a long day of skiing. This takes the cake. Even though this was really quick to make, they disappeared even quicker.
What you'll need:
-1 cup creamy peanut butter
-2 teaspoons butter, softened
-1/2 cup confectioners' sugar
-3/4 cup brown sugar
+pretzels
-1 1/3 cups chocolate chips
Directions:
1. In a medium bowl, mix together the peanut butter and butter with an electric mixer. Add the sugars and mix until fully combined.
2. Scoop 1 teaspoon of the mixture, and roll it into a ball. Sandwich the ball between two whole pretzels. After all the balls are sandwiched between the pretzels, place the sandwiches on a tray and freeze for around half an hour.
3. Place the chocolate chips in a microwave safe bowl and heat at 30 second intervals, stirring occasionally until completely melted. Remove the pretzel sandwiches from the freezer and quickly dip each one halfway into the melted chocolate. Return to the tray and repeat with remaining sandwiches. Once they have all been dipped, return the tray to the freezer to set completely. Store the sandwiches in the fridge until serving time.
