Tonight, I felt I needed a break. I needed to unwind by baking something. Now usually when these baking urges come on (which is very often) I want to make some cookies or something fast, but not today.
Today I want to make something that will take a couple of hours. This way I can procrastinate in the most productive way. And what better to make than something that uses yeast?
Now this is the first time I have made a homemade pizza, so bear with me. This recipe makes a LOT of dough, so when I find the perfect pizza (which I hope will be shortly) I will post my success. For now, here's the recipe for the dough.

What you'll need:
-2 1/4 teaspoons active dry yeast
-1 tablespoon white sugar
-2 1/2 cups warm water (110˚F)
-2 tablespoons olive oil
-1 tablespoon salt
-1/2 cup whole wheat flour
-5 1/2 cups bread flour
1. In a large bowl, dissolve the yeast and sugar in the warm water. Let sit until creamy, about 10 minutes.
2. Stir in the olive oil, whole wheat flour, salt and 4 cups of the bread flour into the yeast mixture. Mix in the remaining flour, 1/2 a cup at a time, stirring well after each addition. When the dough has pulled together, turn it out into a lightly floured surface and knead until smooth and elastic, about 8 minutes.
3. Lightly oil a large mixing bowl and place the dough in the bowl and turn to coat. Cover with a damp cloth and let sit in a warm place to double in size, about 1 hour.
4. Punch down the dough and turn it out onto a lightly floured surface. Divide the dough into three equal pieces and form into balls. Cover and let rest for about 10 minutes. Preheat the oven to 425˚F
5. Use a rolling pin to roll the dough into your desired shape. Cover with desired toppings and bake for about 20 minutes or until the crust is golden brown.
